VRTX Supper Club Presents: Under the Sea
Escape to the coast for an evening of fresh flavors, thoughtfully prepared seafood, and great company.
Join us at VRTX Restaurant & Bar for Under the Sea, a four-course Supper Club inspired by the bright, vibrant flavors of the shoreline. From citrus and fresh herbs to buttery seafood and a classic Key lime finish, each course is designed to celebrate the best of summer.
Citrus Shrimp & Mango Salad
Grilled jumbo shrimp paired with a refreshing mango-avocado slaw and bright honey-lime vinaigrette.
Smoked Salmon Tartine
Smoked salmon layered on grilled baguette with house-made chive & dill cream cheese, cucumber ribbons, capers, pickled red onion, and fresh herbs.
Lemon Garlic Halibut
Parmesan-herb crusted halibut finished with a silky lemon beurre blanc, served alongside creamy lemon orzo and French green beans.
House-Made Key Lime Pie
A coastal classic featuring our scratch-made graham cracker crust, fresh whipped cream, toasted coconut, mango coulis, and candied lime zest.

Our Supper Club dinners are intentionally intimate, allowing our chefs to showcase seasonal ingredients and creative menus in a relaxed, communal setting. Whether you're a returning guest or joining us for the first time, we invite you to spend an evening discovering great food, great drinks, and great company.
